Guacamole: recipe finesse


Here is a recipe I like very much for a delicious Guacamole:
For about 50 cl
3 small avocados 1 ripe tomato
but firm, peeled, seeded and cut into small dice
1 small jalapeno or other small green pepper, seeded and finely chopped ½ small onion chopped


25g chopped coriander 2 tbsp. A soup of fresh juice of lemon yellow or green
1 pinch of salt

Preparation:
1. Pit, peel lawyer. Mash the flesh until a smooth purée with small pieces. Add remaining ingredients, stir gently.
2. Serve immediately or place plastic wrap directly on the guacamole (not the bowl) to prevent it from darkening, keep refrigerated. Serve with Mexican chips, raw vegetables or tacos.

Tip: a lawyer to prevent browning, keep the nucleus of the mixture with your lawyer. Remove just before serving.
