4 zucchini, diced
4 plum tomatoes, halved and seeded
2 large red peppers, seeded and diced
45 ml (3 tbsp) balsamic vinegar
45 ml (3 tbsp) oil Olive
1 liter (4 cups) chicken broth (about)
500 ml (2 cups) cooked lentils (or brown coral)
Salt and pepper
1. Place rack in center of oven. Preheat oven to 220 ° C (450 ° F).
2. On a baking sheet, combine vegetables, vinegar and oil. Add salt and pepper. Bake about 20 minutes until vegetables are tender, stirring occasionally during cooking. Remove skin from tomatoes and cut the flesh into cubes.
3. In a saucepan, bring to boil broth, vegetables and lentils. Simmer about 5 minutes or until vegetables and lentils are very tender. In a blender, purée soup until smooth. Add broth as needed. Adjust seasoning
4. Serve the soup as a main dish. Serve with a slice of cheese to taste and naan bread trade.
