I found this recipe on the blog isa and gluttony dionysus but the source comes from this site . It's great and good as the original recipe, do it again for sure.
2 cups flour
3 / 4 cup sugar
2 1 / 2 c. teaspoon baking powder
1 tsp cinnamon
1 / 2 c. teaspoon salt
1 cup milk 2 tablespoons
tablespoon instant coffee
1 / 2 cup butter or margarine, melted 1 egg
1 tsp teaspoon vanilla
3 / 4 cup mini chocolate chips
Preheat oven to 375 degrees (190 °)
In a bowl, combine flour, sugar, baking powder, cinnamon and salt. In another bowl, combine milk and instant coffee. Add butter, egg and vanilla and mix well. Pour the liquid mixture to dry mixture and mix a little, just to moisten everything. Stir in chocolate chips, stir and pour in a little 3 / 4 in 12 boxes of paper. Bake at 375 degrees F about 15-20 minutes or until center of muffin comes out clean. Cool 5 minutes, remove muffins from pans and cool on rack. Garnish with icing.
Frosting Cappuccino:
4 ounces cream cheese 1 tbsp
tablespoons sugar
1 / 2 c. teaspoon instant coffee
1 / 2 c. teaspoon vanilla
1 / 4 cup mini chocolate chips
In blender, combine glaze ingredients. Cover and refrigerate until needed.
